Swiss Miss

The cheesemaker with whom I apprenticed in Maine several summers ago (Appleton Creamery) recently sent a package of her cheeses. It was so much fun to enjoy a taste from the past.

It was also fun to eat cheeses other than my own. I obviously make many different kinds of cheese but many are less-than-perfect and so their existence is simply annoying. Plus, there is something nice about eating but a nibble of a finished product, the way one slice of cake made by someone else is magical whereas a whole cake I made seems like a burden.

P.S. This is a slice of Cait's Swiss (forgot the name). It was one of my favorites.
